Parsley and Mint, a Greenville-based Mediterranean bistro, is heading to 600 S. Main St. this April and the University Square Shopping Center in May with lamb kofta, house-made falafel and locally sourced ingredients.

The restaurant will host dine-in options and in-store retail offerings with an emphasis on its delivery, takeout and catering services, according to a news release.

Paul Ryll, appraiser and owner of Greenville’s Oscar Mike Appraisal Group, will bring his insight as a Johns Hopkins University Carey Business School graduate to the table as Parsley and Mint’s owner, according to the release. Ryll is also working toward a Master of Professional Studies in Food Business from The Culinary Institute of America.

“We are thrilled to launch the Parsley & Mint brand with our first location at 600 S. Main St.,” Ryll said in the release. “With the restaurant industry evolving significantly over the past year, I began to envision a new concept focused on truly fresh, made-from-scratch offerings and a strong takeout and delivery component. The result is a purposely designed restaurant that our community will enjoy for years to come. We look forward to serving the Upstate community through this first endeavor as well as future Parsley & Mint locations.”

Menus are in final stages of development at both locations but will feature items such as kofta, grilled Mediterranean citrus chicken, house-made hummus, falafel and pickled curried cauliflower.
